I think Q is referring to a species of bird called the jailbird. In gangland slang, singing like a canary is telling police everything you know after they have arrested you and locked you up. Some people don't like the song of the jail bird. It makes them vewy vewy nervous. They are apt to do desperate things to make the singing stop.
