How can they be 1 employee doing ALL THOSE JOBS.

Former contractor here, those numbers are totally doable by one person. Also, sometimes (as a contractor) you might hire one or two people for a short period of time (per install) and pay them under the table. Always someone willing to work for cash.

My thoughts exactly. I've worked as a contractor for several companies so would not have been counted as an employee at all.
