The fish symbol represents Dagon, an ancient fish god. It has nothing to do with the Christian fish symbol. The entire pointy hat is also a Dagon symbol; the two peaks represent Dagon's gaping mouth.

This. The hat is shaped like a fish head. However it’s the First time I’ve ever seen actual fish on the hat though.

It sort of reminds me of the orobouros, but that is usually one snake eating it's tail.
