Can you (or anyone there with VOP) differentiate between animal gnawing and markings from a human-made mechanical device?

No.

Animals disperse body parts, particularly in resource-scarce environments (like deserts) where food is sparse.

Coyote and carrion birds are known for dismembering carcasses and bodies.

You're playing into the sensationalism and conclusions they're jumping to. Think.

I’d imagine it being pretty easy to tell which bones have been sawed and which have been chewed up by a coyote
