No they don't.

Most browsers use system DNS. Which your ISP provides from your modem. Your ISP DNS is closest to you, and is secure DNS keyed to root DNS servers. If this is gibberish to you, you don't need to be modifying DNS settings.

Open DNS servers are generally run by the likes of Google, Facebook, Microsoft etc. They don't need more of your data.
