You could cinfgure google to be deaf dumb and blind in pie (9.x). the only real way to get rid of the google data collection in the Q(10.x) version is to:
1) find a custom rom for your device that does not include GAPPS.
2) grab the usb drivers for your device
3) get the correct rom flashing software (however that's done for yours)
4) unlock your bootloader (however that's done for yours)
5) flash dat shit
no joke. did the 9.x digging. 10.x is even more stringent to google policy now. NOT POSSIBLE to turn off collection from the phone device. ALL comms apps are tied tightly to GAPPS now. if you deny perms to googe play services,in 10, the phone pukes all over itself and is unusable..
DO NOT SIDELOAD GAPPS on a rom, for the love of God.. Don't go use a rom that has any flavor of GAPPS preloaded either, it defeats the point, imo.
ymmv, mine was easier to do than i figured it would be, being a recent first-run device with no "official" roms.. So do due diligence, bricks suck.
It's not technically hard, as long as you get a good set of directions+software. the XDA developers groups are a good resource for that.
If you only have the one device I would say: Go research what device works for the custom rom you like, and buy that to do custom roms on. Don't go testing rando shit on your only phone, unless you know the custom rom will work. ie due to being mature, your phone might in the "official" lineage/whatever rom you choose support list, etc etc..

I literally only did mine because I'd gotten those android and the apple devices for irl testing and reporting the findings, and nothing else. So if I had burned the android one… oh well.
