Well, just to make it easy for you, “mouton” is sheep or lamb.

 

Mouton Cadet means Young sheep/lamb.

 

There was much discussion of the symbolism of the sheep symbol and I believe there was a pic of an older Roth lady with a Lamb on her necklace and earings.

Cadet is a word used in Fr to compare. Like if a woman said she is going shopping with her son and she has more than one son, and if asked which one, she might respond, Le cadet, to indicate the younger son.
