For you under nourished anons. Egg Nog: 500 calories/cup. Prepare: Put fairly large pot on stove burner. Clear counter and put large mixing bowl next to a sink bowl. Open a dozen egg carton and set next to the large mixing bowl. Invert a small grocery plastic bag and put it behind the mixing bowl and eggs.

 

Put 1 quart whole milk and 1/2 quart heavy whipping cream into pot. Add 1/2-2/3 teaspoon nutmeg. Turn heat to medium (5 on a electric stove) and put a candy thermometer on the pot. Crack eggs and separate the yokes from the whites. It's tricky, but you pour the egg from one half of the shell into the other. Letting the egg whites go down the sink drain. Put a dozen egg yokes into the large mixing bowl.

 

Whisk egg yokes hard. Add 1 cup white sugar, whisk hard. Add 1/2-2/3 teaspoon vanilla and whisk more. Shake of whisk, clean a little under the running faucet and go to the milk/cream pot. Whisk until the temp. reaches 165 degrees F. Remove pot from stove and put next to the large mixing bowl (replacing where the egg carton was).

 

Use a large dipping spoon. Add spoonfuls of hot milk/cream mixture to egg yoke bowl. Whisking as you go. Do that until you can't get a full spoonful. Then just pour what remains in the pot to the mixing bowl and whisk.

 

Pour the whisked mixture back into the cooking pot and put back on heat. Whisk again until temp. reaches 165 degrees F. Then put bowl into the coolest place in the house to cool. Pour into a 2 quart+ plastic pitcher and into refrigerator.
