Probably depends on state law.
I think they'd have to keep the name "Joe Biden" on the ballots. And then, if that name somehow wins, then the electors who are sworn to that name would have free will, as they always do, to vote in the real election for whoever they think the voters would have wanted. The worst thing they could do is change the name on the in-person ballots: if Trump gets 48%. Biden gets 26%, and the replacement gets 26% then Thump wins the state.
