Regarding the Sauce recipe earlier:

2 key ingredients I left out of the sauce were: 1tsp Mustard (such as a nice dijon or whole grain), and 1-2 TBS Coconut Aminos.

Check out the Coconut Aminos (also regular Aminos). Good alternative to Soy Sauce and adds nice flavor.

You don't need to be denied tasty food and a life at the table, while healing the gut.

Good, just trying to help. It can be very hard (and discouraging at times), went down a multi-year path to get to this point. Very much in control now.

btw, Avocados are your friend. As well as Avocado Oil and Olive oil - use liberally.

Want another nice one? Meatloaf!

I make a batch, then cut into slices and freeze. Easy to heat up in the toaster oven:

 

Turkey and Spinach Meat Loaf

 

Ready In 40 minutes

Serves 4

Ingredients

1 1/2 Cups Pecans (made with Walnuts โ€“ was great)

1 Pound Lean Ground Organic Turkey (have made with beef as well)

1 Package (10 ounce) Frozen Spinach thawed and squeezed dry (can skip thawing & squeezing, simply break up frozen spinach and incorporate)

2 Eggs

1 Tablespoons Extra Virgin Olive Oil

1/2 to 1 Small Onion diced

1 Teaspoon Dried Basil

( add other herbs to suit Thyme, etc.)

1/4 Teaspoon Sea Salt

1 Pinch Black or White Pepper

 

Preparation

Preheat oven to 375 degrees.

In a food processor, grind the raw pecans/walnuts to a medium-fine texture.

In a large mixing bowl, combine ground nuts with remaining ingredients. Mix well. Place into an oiled loaf pan and bake for 30 minutes (preferably, use thermometer to reach internal temp of 165 deg, especially if starting with frozen spinach, and/or stoneware loaf pan).

Remove from oven and allow to cool for 5 minutes before serving.

Benefit of this is it doesn't have gluten (bread crumbs) to hold together.

Almond flour is another alternative to hold it together, if you don't want to grind the nuts.

Haven't tried, but Cassava flour would be good as well to incorporate.

Not sure there is an issue to brace for.

Think it's being brought up to "Normal" levels for off-flood season.

Haven't checked weather in the region.

This note is important:

That's a good point, and why I've been keeping a tab open, and checking it every day as well.

The one "concern" I've had is with the pattern for the outflow gates, that started a few weeks ago.

Very "stochastic" - jumpy. It's as if they open the gates, then need to close, as if doing some maintenance (such as cleaning debris, or something else). Not a smooth control, as seen earlier in the year.

Good to continue monitoring for sure.

Also, just the sheer capacity of water there, the potential, should there be some "event" such as an earthquake or other, has significant implications downstream.

Taiwan is a tough one. Hopefully once CCP removed, can go back in history 60 years, and build from there.

Wonderful people in Taiwan, traveled there years ago and so so impressed.

Cool, traveled 2 weeks in China as well, with a Mandarin speaker (and could read/write), so we went totally off the beaten path (back alley markets, hiring private cars, late nights at bars playing dice games, all sorts of fun). Beijing, Guangzhou, Shiyan.

That was 15yrs ago though. Not sure what would be like now.

Same deal in Taiwan - traveled the country, from shows in Taipei, to mountain visits at sunrise to top of Shiyan via rail.

Learned to love Oolong tea in Taiwan. Gong Fu Cha style.
