Here's an update.
Andriod 10 completely disallows this method of denying permissions to Google collection. It is no longer possible to deny Google access to your data.
Do look elsewhere for a device if you can afford it, or put a non-gapps rom on your phone.

Android 10 no longer allows the disabling of google play services warnings; it has expanded the list of apps that use gapps directly.
So I just put this other firmware on this android 10 device, and learned some shit.
1) The custom roms wreck the stock roms in speed.
2) installing GAPPS in ANY form ruins the point of flashing a custom rom
because
3) the act of putting opengapps on any custom rom still opens you up to google in very shitty ways. Because system files are replaced. and google play services will not be silenced.
so it's not a try it out and uninstall.
it is a reflash your phone again without gapps because now you know affair ;)
best is to research per device. I'm running lineage 17.1 now. gonna try a couple others too. don't even need to root it, it's just nice

Apple users are completely fucked, there's no custom roms for those and it's baked into the firmware, no way to have "apple osp" etc… so yeah…
well, at least you threw linux on it. I went the other way.. was an early google adopter. then completely divested in mid 2016.
The found out later on (here) that getting the urge to do that was legit and not tin foil ;)
