Unless they use Military grade hard drive erase tools (which can take hours and days), nothing is ever completely wiped from it. Military grade recovery tools are used a lot on normally wiped hard drives to recover deleted incriminating evidence by law enforcement. If they used SSD's, it's even a bit trickier to completely remove the data using normal methods. The only way would be to physically destroy the drives.
