Pepe’s Meatball Recipe:
1 1/2 pounds ground chuck
1 pound ground sirloin
1 pound ground mild or plain pork sausage
1 pound ground veal
2 1/2 pounds FRESH Italian style breadcrumbs
4 eggs
2/3 cups of milk
3 teaspoons of finely minced garlic
1 cup of grated parmesan
3 tablespoons of parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 of an onion finely minced
1 tablespoon of Italian seasoning
Mix all ingredients together very well. Form into meatballs by using a 1/3 measuring cup. Drizzle with olive oil and bake in two greased 9x13 baking dishes on 350 degrees for an hour. Carefully remove from baking dishes and out of fat when done and set on cooling tray.
Yields about 40 meatballs.
