Because messenger RNA doesn't encode into DNA. It's the opposite. In the normal cell, DNA produces mRNA which then teaches the cells to make proteins - in this case, the mRNA cones in from the outside with instructions on how to make antibodies against the virus. After the antibodies are made, the mRNA falls apart.
As far as how antibodies work, they are just proteins that coat the virus particle and alert the immune system to its presence…triggering the kill response.
Now, I do know that there are other types of RNA that can change DNA. So, sure, it's theoretically possible that the companies are lying about what the vaccine is and it actually re-writes your DNA instead of protecting you. But let's put the science aside. We've just agreed that the one thing that pharma loves above all else is $$$$$. Ultimately, they are not going to make any money if their vax kills people or causes them to grow another arm. Can you imagine how much they'd get sued? They will only get really rich if it works. Or at least isn't crazy harmful.
I get it if people feel they need to wait for a while to confirm no long term effects. But those are my personal reasons for being ok with it.
