Could be bacteria in the condensation causing it to spoil.
Also, if you touch the cheese without washing your hands you will leave behind bacteria that will cause it to spoil quickly.
I always wash my hands and dry them really good before taking cheese out to cut a slice off of and store it in a ziplock bag with all the air squeezed out.
