The hatch is to access the nose bay.
There are similar hatches on both sides of the nose.
The bay probably holds much of the radar avionics stuff.
The reason that the bay appears missing on the lower image is because it is blurry as fuck and much of the finer detail is washed out.

Yes they are, and so are tanks and all sorts of other military stuff too.
It would be pretty difficult to create an inflatable plane the size of a C-17 that would be both realistic and easily movable.
