Some anons like more of the information carried forward, some like lean dough. Maybe having baker's choice keeps both versions fresh.
I've been poking around looking back at older doughs to see what used to be the norm, and there was a ton of information that got dropped at various points. Some probably because links went bad. But maybe there were bakers who were intentionally hiding it? Have to assume that there's been some antagonists who have been baking, right? I am not one of them, but I'm first to admit I am also no authority on what is absolutely correct.
