any suggestions for breakfast?
I got homemade hickory smoked bacon. I've never had or heard of Benton's, but surely homemade has to be close.
I'm pretty sure it has something to do with the fat to meat ratio of pork belly as compared to other cuts of the hog.
Everything else will have more of a hammy flavor.
Canadian bacon is made from the loin, even though the cure recipe is a bit different than what I use for bacon, Canadian bacon always tastes like ham.
It is a legitimate question to ask, but my best guess it has something to do with the fat.
