Use a plain background with white lettering since your graphic is not visible and only createa a mess. Or scale it massively so the lettering does not cover the graphic so completely.
Red text is almost always a bad idea unless you know a lot about graphic design, which you dont.
Stick with black or white lettering depending on the background.
Rule 1 is your message must pop.
Software is not the problem.
But start with Gimp if you're going to use diff software. Gimp will keep you busy and productive for years before you need to I've up to Photoshop.
