Beer Corn Bread

 

INGREDIENTS

 

1/2 can warm beer

1 lb self-rising flour

1 can of corn kernels a 14 ounce can, or equivalent amount of fresh sweetcorn cut from the cob

 

INSTRUCTIONS

 

Dump flour into a mixing bowl.

Drain the can of corn, mash them in a bowl, then mix them into the flour

Add half of beer โ€“ it should be room temperature, and mix, then continue adding slowly โ€“ you donโ€™t want the dough to get too sloppy.

Once combined, stop, as you donโ€™t want to overmix.

Scrape the mix into the pre-warmed Dutch oven or into a loaf pan and bake for an hour.

 

Leave to cool in the Dutch oven or loaf pan for 20 minutes or so before turning out. The loaf is ready when a skewer inserted into the loaf comes out clean.

 

The recipe didn't specify an oven temp, so I did 350F in a loaf pan for about an hour.

21 Then the Lord said to Moses, โ€œStretch out your hand toward heaven, that there may be darkness over the land of Egypt, a darkness to be felt.โ€ 22 So Moses stretched out his hand toward heaven, and there was pitch darkness in all the land of Egypt three days. 23 They did not see one another, nor did anyone rise from his place for three days, but all the people of Israel had light where they lived.
