Where did that saying come from. On a sailboat the sides of the sails are attached to a mast. There are ropes attached to the bottom of the sail which is tied to a cleat on the side of the boat. These ropes are called 'sheets'. When you sheet loses it's attachment to the cleat the sail just goes where the wind takes it with the loose sheet. You on a sailboat and have 3 sheets to the wind you out of control.
