This is a bad line of argument because you don't actually care about who "selected the stories". You wouldn't believe them regardless. Say we throw Enoch 1 in the bible, or all the Enoch books, Catholics never cared about those. Wouldn't matter to you.
There's no historical basis for what you're saying. The coming of Jesus Christ was written of long ahead of time, long before the Catholic church.
I genuinely have no idea how you can read the Old Testament and think that it doesn't describe Jesus Christ throughout.

Seems to me the idea of truth offends you, you can't possibly believe that anyone at some point told the truth or wrote it down.
