Interesting idea! We plant by just putting the seed potatoes right on top of dirt in our garden, then cover with seedless straw. You can try with regular store potatoes.. let sit until they sprout from eyes. Cut into pieces with an eye sprout in each piece, let dry a few days, then plant the pieces. Sometimes this works, sometimes not, so we stick to store-bough seed potatoes (sold in a bag, ready cut for planting).

 

We yield a ton this way and I slice and dehydrate for storage.
