Cut the wires, always.
Camera LEDs are software controlled instead of being on the same circuit as the camera itself. Makes sense? No.
Microphone - cut the wire.
For cameras a sticker on the camera is also enough. (hopefully no mini cameras are hidden elsewhere)
Can microphones really get disabled?
Can speakers be used as a microphone?
