No to ricotta as well. Bechamel sauce instead. Learned that at a cheap tourist bistro in Rome. Also learned this. Take crushed red pepper flakes and mix 1-3 with olive oil. In a small pouring jar fill the bottom third with the pepper flakes. Then use that to drizzle on your pizza. Fantastic.
