You need a car with a mechanical or hydraulic clutch pedal so you can disconnect the engine from the wheels if all of your car's digital controls (wheel, throttle, brakes) either stop responding or begin to seemingly control themselves.
Why do you think manuals are being so aggressively phased out?
Unless you're getting a muscle car or sports car, your options are painfully restricted. Jeeps have, perhaps suspiciously, maintained 2 lines of SUV that can always be had with manual transmissions.
