I'll make some after the holidays since I'm about to do some traveling.

I still have almost 5lbs of dried natto-sized soy beans to work through. Don't have any natto in the stores in my area so I got some freeze dried B. subtilis var. natto and use that with a small yogurt incubator. Works pretty good.

 

Also tried using the 12-bean soup mix you can get from the dried bulk bins at the grocery store. Seemed to do ok, but the tiny soy beans still work great and have a better overall texture imo.

 

Already cooked and ready black beans sounds like a great easy step; I'll give it a try! :)

I'll have to try the sugar and whey trick.

I make milk kefir daily, though letting it go for longer will produce a nice clear whey. Do you think that might work. You've got me totally curious about possibilities.

 

(probably would need to let the kefir whey die off from living to just the whey proteins so the beans don't become kefir beans instead)

 

adding a little sugar does make sense, give them little guys some easy food to munch on while they also work on they beans

I've got a working bacteria strains spreadsheet with milk kefir, water kefir, and several over the counter brands of probiotics that I've used for making yogurt. This will help me with some research and possibly figuring out what has those strains, what might/might not work.
