how comes rivers used to dug huge canyons in the past but today need to be dugged out by excavators all the time so ships don´t get stuck?

so then grand canyon which is rather wide was dug by a small stream that tilted from one side to the other? bc what you describe would lead to a really thin and extremly deep grand canyon, which is not really the case.
