Putting one together using gene-splicing from existing species is not really "bringing it back". You're just recapitulating ontogeny via a new phylogeny.
The real sadness is the extinction of the indigenous trees that require their seeds to pass through the digestive system of a large bird before germinating - all the existing forests are getting old an dying. Can't recall the name of the tree though, but I understand that the seeds will germinate if they are force-fed to turkeys. Without human intervention, there will be a cascading ripple-effect through the rest of the island's ecology, but it occurs on timescales that most people cannot appreciate.
