That's not the way it's done. First of all, that ham is round when it should be flattened out. Second, it still has salt on the skin. To cure a ham you salt it every other day for a couple of weeks (you can tell by how much salt the ham has taken in) Oh yeah, you lay it on a tilted bench with a flat board with a weight laid on top (I used a 40 lb. bar-bell) so the water from the curing ham will drain out. It takes less salt and less often over a couple months. Then you wash the ham and cover it with black pepper and hang it from a high rack. It takes 1 year for you to have a great cured ham.
