Pork was a meat that was not to be eaten by the Israelites (jews are not Israelite). When the 10 tribes split form Judah and Benjamin and migrated into the area that is now Europe they fell away from the laws but they knew the reasons for Gods law. They cured the meat through smoking and salting which made the meat safe to eat.
This curing process gave us food to eat which we would have died if we did not have it. Israelites feed pigs properly.
