REPORT on anon's attempt to break the 1 hr. record of 'prep time' for Jambalaya. Recipe says 15 minutes. Remember it took me 30 minutes to just get the onions, bell peppers, jalapeno peppers and celery sliced. Took a break. Anyway, got back at it and spent another 60 minutes prep time and it's in the oven almost done. Total prep time: 95 minutes, not 15!

The jambalaya turned out great. Made a change this time. The first 6 or 8 times I followed the recipe and simmered it in the 6 qt. dutch oven on the stove top. This time, I got it to a simmer on the stove burner and then put into a 350 degree oven. Here's a pro-tip: drizzle some sweet chili sauce on top of the serving.
