It's true. For example "Every trans person wants to talk to your kids about sex!" It's a lie, but it's good ratings, and it fucks with a group conservatives would rather get rid of anyway. Oh, you didn't think our side did this shit?
Your only real legal recourse is religious exemption, though a lot of places are like "Yeah, we don't care", now. The issue would be if she's agnostic or non-conforming and didn't want to lie about it, using religious exemption as a bullshit excuse. Then you'd have an actual moral dilemma on your hands. But since she's a Christian, you have 35 thousand flavors of denomination to pick from to identify as for religious exemption. Just tell them your body is a temple of the holy spirit, and quote 1 COR 6:19. Since her body isn't even hers, it would be an act of disobedience against the almighty, all powerful, all living god to get a vaccine. Get a rando pastor to sign it and have her keep it in her binder with her resumes.
Huh. That could be useful.
