I am a professional knitter and crocheter. I can tell you that she is, in fact, using needles. Allow me to explain.

 

He is using Circular Needles and he is knitting "in the round". You can see the plastic part of the circular needle as it holds the stitches moving under his left hand.

 

The yarn with which he's working is very fine and therefor the tips of the needles are small. He appears to be knitting in the "Continental" style which brings the stitches very close to the tips and appears to be behind his fingers (which would be in front of his fingers from his point of view).

 

The string that you see below his hand is for holding live stitches so a knitter can go on with the rest of the pattern and come back, pick up those live stitches, and continue that part of the pattern, such as a sleeve.
