How many tables have they got?

How many employees have they got and what are they paid? (From what I have read, it's a chef, an under chef, and a manager)

How much would rent and property tax be likely to be?

Is there anybody involved in the restaurant business who can comment knowledgeably on the finances and finances of the business?

I would normally expect such a business to be run by a family with few if any paid employees; but two chefs and a manager? (Plus wait staff).

On the other hand, the poor state of the exterior does suggest financial stress, and insulting 50%+ of your prospective clientele also suggests that the owner/ management are not seriously interested in running a profitable business.

So what is their game; what are they up to?

Is the business being deliberately run as a tax loss?

It would answer the questions as to why her business does not seem financially viable, and what it is a front for.
