Thanks for trying to solve a huge issue. Many times I have watched good bakers allow for new bakers to practice while standing by and assisting them to get real time experience. There are a couple who seem to go out of their way to coach apprentice bakers. It has been humbling to watch. I think the only problem bakers we have are the 2 you are already aware of.
We have already started using names for bakers, I actually really like that idea as well. AM Baker, Workfag Baker, Apprentice Baker, Nightshift Baker, etc. Can those bakers use those tags when identifying for bread handoff's?
