I am not an expert in heraldry by any means but did some checking on the Ramos coat of arms Q linked to.
First there are many different coats of arms for the Ramos name this is because (in the European tradition) they were granted to individuals not families. However they were passed through families, usually via the first born son. It is entirely possible it was just a picture Ramos found online and liked. To find out if it was actually tied to his lineage would require researching his family tree and checking to see if that particular coat of arms was ever granted to any of them.
Clearest references I found:

based on which
Red - military prowess, strength
Gold - wisdom, generosity
Castle - Security
Portcullis -protection
Olive - peace
So my interpretation is peace and security through strength and wisdom. Maybe in honor of a wise defense of something?
