Sure. But during gaps between data points, can a brief landing and take-off occur? Force of habit to dig into hardware, networking and software details:
Radars located at airports, way stations, etc. ping aircraft transponders. Transponders respond. Amateur ADSB receivers located all over the place receive the aircraft transponder signals, log them, and forward to ADSB database. over the internet. Signals can be missed or dropped, producing gaps.
Is it possible for a touch and go landing, long enough for a person standing by to rapidly handle some cargo, to take place between data points? Of course it is.
So watching a plane's altitude profile is a clue as to what may be taking place, but not definitive.
