I see it as a symbol of rebirth. The pelican is likely synchronized with the phoenix, rising from the flames again.
The mother pelican sacrifices itself and its body (bread) and blood (wine) nourish the next generation.
The kab-al believe that if they eat the flesh of the dead they absorb a part of that person.
The evil incarnation can remain in the physical realm, carried along through the bloodline.
