Kennst du Rieberdaschi? It's potato pancakes. Bavarian dialect. In the north it's Reiberkuchen. When I make hashbrowns I always serve with apfelmuss.
Here's the trick to make great hash browns. Grate the potatoes. Put oil (I use olive oil) to cover large frying pan. Tale the grated potatoes and over sink squeeze the water out like your making a snow ball. Spread in heated oil, med. high. Wait awhile and with a fork spread a big pat of butter on top. Cut with two spatulas into quarters and turn to cook other side. Serve with applesauce.
