Hey anon….. you can look up the book Root Cellaring by Bubbell and find the sauerkraut recipe in the back of the book… couple tbsp of salt per pound or so, I don't remember the exact recipe but it's not much.
Well a couple years ago I thought to myself, what if I used the same recipe and made a brine and put broccoli in it and let it set?
I did that and I have a gallon jug full of broccoli sitting in the basement that still looks edible.
