They actually did it when Babylon carried the tribes of Judah off into bondage, circa 600BC. The Edomites wasted no time in pursuing and elimination the remnant left behind by Babylon.

 

The events are described in the books of Kings and Lamentations.

Incidentally, the Edomites are those biblically described as Jews. Before the Edomites occupied Judah, the original Israelite inhabitants were biblically called Judeans. It wasn't until after occupation of Judah, that Edomites became known as jews, in differentiation of Israelites.

 

If you go back to Esau's blessing which he begged from his father Isaac, it describes that Esau will throw off the yoke of servitude to his brother Jacob, by the sword. And this event in 600 BC is Esau/Edom throwing off that yoke.
