A spectacular corned beef pie recipe for you here - but you'll need some extra pennies in your pocket this week to make it, because we're going all in on this one and really pushing the boat out. Some people say that only poor people or dogs would eat corned beef. But my corned beef and potato pie will satisfy even the most sophisticated of tastes - and you won't suffer any Victorian afflictions after eating it. Apart from full belly syndrome but I don't think that's too serious. Enjoy!
Rich Person's Corned beef and Potato pie recipe:
Pastry:
400g all purpose flour
1 teaspoon salt
Good pinch of pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
100g cold cubed butter
100g cold cubed lard
2 tablespoons vinegar (optional)
100-125ml cold water
Filling:
Around 400g waxy potatoes cut into bitesize chunks and cooked fully
1 medium onion
1 medium carrot
2 tins corned beef (680g)
A glug of water
1-2 tablespoons vinegar
Season as desired
Bake in a pre-heated oven at 180 Celcius (fan setting) and that's around 360 Fahrenheit, for 60-70 minutes.
