It's so easy!

It's basically egg yolks, oil, a tsp of mustard (I make my own mustard too) and lemon juice, salt to taste.

 

You need at least two egg yolks (I usually use three to make a full jar). I first sterilize the eggs by putting them in boiling water for just one minute to sterilize the outside shell.

 

Place the egg yolks in a bowl along with the mustard and start very slowly (a few drops at a time) adding oil as you vigorously whisk them, keep adding oil & whisking (I don't really measure the oil, but you're probably going to use enough to fill a two-three cup mason jar).

 

As it thickens add lemon juice to thin it out (juice of one lemon should be enough), keep doing this switching between the oil and lemon juice until you get a good consistency and you've used up all the oil to fill your jar. Salt to taste mix it in well.

 

That's it! Just takes a few minutes. Don't use olive oil, use a vegetable oil that won't have a strong taste. Some people also add white pepper for taste, up to you.
