Lard and tallow used to be huge staples in cooking. Acts the same as butter because it's natural.
Much better to use than Crisco, which is fake.
Anon's grandmother fried everything. Sometimes she would put it in gravy that she made off the frying grease. Venison, squirrel, chicken. I don't know that she ever ate a piece of beef in her life.
Full-fat dairy, butter, yard eggs, fresh or home-canned vegetables, baked biscuits 3 times a day, baked cornbread twice a day. All liberally "greazed."
When she made us "hot cakes" she had a skillet with about an inch of melted lard and she dropped the batter in, much like they do funnel cakes now. Served with ribbon cane.
Point being: this is the way she and my grandpa had eaten their whole lives. He lived to be 98; she lived to be 83.
