If you live in a cold climate you can grow just about any variety. If you don't have cold (freezing) winters your choices will be limited.

Should add that any variety will grow in a warmer climate but the head of garlic will likely not form individual cloves but one giant golf ball sized round clove. Not a problem if you really love garlic.
