I guess if there is any question on authenticity, you can try buying Hopi Blue directly from the Hopis. Hopi Blue has been around for thousands of years. Hopis say it's the one true corn, and the mother of all corn.

 

True Hopi Blue is not a big corn. It has a smaller ear. I used to watch my Hopi mom dry it in a cauldron outside. In the Arizona heat, she would sit for a few hours at a fire with a steel cauldron and a wooden paddle and continually stir the corn in the cauldron so it wouldn't burn. Then they would mill it into flour to use for their Piki bread and Samivikis.
