They learn a lot more than that. After they graduate, they usually go into a 'mentor' or 'apprentice' type program with the type of business they want to go in, whether it be carpentry or building horse-drawn machinery for the rest of the world (look it up). Could be farming, running a coffee shop or a flower stand, a bakery, or a quilt making business.
The Amish also will sometimes send t their kids on to highschool then to college to learn things to bring back to strengthen their communities, like to Penn State's agriculture program which is a very common one, or to get their real estate licenses, construction, electrical and plumbing certifications, or business programs.
They've got their own grocery stores AND grocery distribution systems after they saw the shortages of Covid the rest of us suffered through, and take a look–they have built or are building their own medical clinics and centers..
Amish farm houses are now complexes where several houses for various family branches sit among barns and outbuildings where several family business run. Their farms and businesses are profitable, and …they have their own banks now too.
They took one look at what shit the rest of us will put up with, and they said 'hell naw'.
