Oh yeah, im cool w it all. Can't imagine baking then.. kek i DID work as a baker in highschool, a bagel shop.. it was super popular, before Einstein bros was around and it was hell to keep up. We made dough, ringed up the bagels, pit em on boards, then stuck them in a walk-in freezer. Next day pull em out and proofed em, and since it was NY style, threw em in a boiler for ~30-45 sec, back on boards and through oven for 2 rotations, flipping them off the boards at first rotation to bake both sides.. w a peel scooping em out and into baskets for out front to sell..
