I got spoiled on NM huevos rancheros. Went to MS and made the mistake of ordering them. Apparently they had no idea what the red sauce was because they put tomato sauce on top of the eggs. I was like WTF?
Red sauce in NM is red chiles not tomatoes. Two totally different flavors.
